Serves: 2

Ingredients:

  • 1 cup of pecans
  • 1 cup of shredded coconut
  • 1 cup of raisins
  • 1 tsp. of ground nutmeg
  • 1 tsp. of vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 2 tbsps. of raw honey

Process:

  1. Put the pecans and nutmeg into a food processor and blend until are finely ground.
  2. Add in the raisins, honey, vanilla, shredded coconut and cocoa powder.
  3. Mix well until everything is perfectly combined.
  4. Place the mixture into a bowl.
  5. With your own hands, shape small balls.
  6. Store in the refrigerator until hardened.
  7. Enjoy!

Excellent recipe to use up veggies plus nuts! Simply a healthy dinner!

Preparation time: 10 minutes
Cooking time: 20 minutes
Total Time: 30 minutes
Serves: 2
Ingredients:

  • 1 bunch of arugula leaves
  • 1 broccoli head
  • 1 cup of green beans
  • 2 tomatoes
  • 1 zucchini
  • 1 cooked beet
  • 2 ounces of almonds
  • 3 ounces of pecans
  • 2 cups of water
  • 1 tsp. of paprika
  • 2 celery springs
  • 1 orange
  • 1 garlic clove
  • 1 tbsp. of olive oil
  • 1 tsp. apple cider vinegar
  • 1 spring of coriander
  • 1 tbsp. of ghee
  • Salt and pepper to taste

Process:

  1. Put the 2 cups of water into a saucepan and bring to a boil.
  2. Cut the broccoli into florets.
  3. Put the arugula leaves and the broccoli florets into the boiling water for 3 minutes.
  4. Cut the tomatoes into small cubes.
  5. Slice the zucchini.
  6. Cut the beet into small squares.
  7. Chop the celery.
  8. Heat a pan with the ghee.
  9. Sauté the green beans for 5 minutes.
  10. In a large bowl, mix all the veggies.
  11. Stir in the almonds, pecans and the chopped celery.
  12. Season with paprika, salt and pepper.
  13. Extract the juice from the orange.
  14. Put the garlic clove, apple cider vinegar, coriander, olive oil and orange juice into a food processor and blend for a few seconds.
  15. Serve this salad with the orange dressing and enjoy!

Ingredients:

  • 2 pounds of chicken wings
  • 2 bunches of asparagus
  • 2 zucchinis
  • 3 celery stalks
  • 2 cups of cooked quinoa
  • 1 tbsp. of coconut oil
  • Sea salt and pepper to taste

Process:

  1. Preheat oven at 350°F.
  2. Put the celery and coconut oil into a food processor and blend for a few minutes until smooth.
  3. In a large bowl, combine the chicken wings with the celery mixture.
  4. Season with salt and pepper.
  5. Let repose for 5 minutes.
  6. Grease a baking dish and put into it the chicken wings.
  7. Bake for 20 minutes.
  8. Cut zucchini into slices.
  9. Put the 2 cups of water into a saucepan and bring it to a boil.
  10. Add the asparagus and zucchini slices and let boil for 2 minutes.
  11. Serve chicken wings with quinoa and salad.
  12. Enjoy!

Thinking of a yummy dessert? Try this!

Preparation time: 20 min
Cooking time: 50 min Total
Time: 70 min
Serves: 6

Ingredients:

  • 1 cup of coconut flour
  • ½ pineapple
  • ¼ cup of coconut milk
  • 6 eggs
  • 8 ounces of strawberries
  • 8 ounces of 75% dark chocolate
  • 5 ounces of almond butter
  • 2 tbsps. of stevia
  • 2 tbsps. of ghee
  • 1 tsp. of lemon zest, grated
  • 8 ounces of strawberries
  • 1 cup of orange wedges

Instructions:

  1. Preheat oven at 350°F.
  2. Grease a baking mold with the ghee.
  3. In a double boiler, melt the chocolate and butter together.
  4. Set aside and let cool.
  5. Blend the pineapple with the coconut milk.
  6. In another bowl, whisk the egg yolks.
  7. Add the honey and whisk until thickens.
  8. Stir in the melted chocolate, blended pineapple, stevia, coconut flour and lemon zest through the yolk mixture.
  9. In another bowl, whisk the egg whites until fluffy.
  10. Combine the 2 mixtures until well combined.
  11. Pour this mixture into the prepared baking mold.
  12. Bake for 40 minutes or until a toothpick inserted to the center of the cake comes out dry and clean.
  13. Decorate the cake with the orange wedges and strawberries.
  14. Serve and Enjoy!

Easy, healthy and light meal recipe perfect for breakfast!

Preparation time: 5 minutes
Cooking time: 20 minutes
Total Time: 25 minutes
Serves: 4
Filling Ingredients:

  • 2 lbs. of strawberries
  • 2 ripe mangoes
  • 3 peaches
  • ½ tbsp. of arrowroot powder
  • 1 cup of raw honey
  • 1 lemon

Topping Ingredients:

  • ½ cup of rolled oats (gluten-free)
  • ½ cup of almonds
  • ¼ cup of cashews
  • ¼ cup of coconut flour
  • 3 tbsp. of shredded coconut
  • 1 tsp. of ground cinnamon
  • ¼ tsp of sea salt
  • 1 tbsp. of stevia
  • 2 tbsps. of ghee

Process:

  1. Preheat oven to 350° F.
  2. Grease a 7 inch casserole dish with the ghee.
  3. Peel and cut the mangoes and peaches into small squares.
  4. Slice the strawberries.
  5. Extract the lemon zest and lemon juice.
  6. In a large bowl, mix all of the filling ingredients until perfectly combined.
  7. Pour the fruit mixture into the prepared dish.
  8. In another bowl, mix all of the topping ingredients.
  9. Put the topping ingredients all over the fruit mixture in an even layer.
  10. Cover with aluminum foil and poke some holes in the foil.
  11. Bake for 20 minutes or until golden brown.Serve and enjoy!

Very delicious and easy to follow dessert recipe!

Preparation time: 5 minutes
Cooking time: 5 minutes
Total Time: 10 minutes
Serves: 3

Ingredients

  • 8 ounces of 75% dark chocolate
  • 1 banana
  • 1 tsp. of vanilla extract
  • ½ cup of shredded coconut
  • ½ cup of strawberries (your choice)

Process

  1. Preheat oven at 350°F.
  2. Chop the strawberries into small squares.
  3. Chop the bananas into small pieces-
  4. Put the shredded coconut into a baking mold.
  5. Bake for 10 minutes.
  6. Chop the chocolate into small pieces.
  7. Melt the chocolate using a double boiler.
  8. Line a baking dish with parchment paper.
  9. Pour the melted chocolate over the baking dish.
  10. Sprinkle the chopped strawberries and banana.
  11. Put the baking mold into the freezer for about 15 minutes.
  12. Remove from the freezer and break the chocolate into pieces.
  13. Serve and enjoy.

Who wouldn’t love this juicy, tasty and healthy lunch?! The recipe is just so amazing!

Preparation time: 5 minutes
Cooking time: 20 minutes
Total Time: 25 minutes
Serves: 2

Ingredients:

  • 16 ounces of chicken breast
  • 1 orange
  • ¼ cup cashews
  • ¼ cup of almonds
  • 1 bunch of arugula leaves
  • 1 zucchini
  • 1 carrot
  • 2 tbsps. of coconut oil
  • 1 cup of cooked lentils
  • Salt and pepper to taste

Process:

  1. Cut the zucchini and carrot into small squares.
  2. Slice the chicken breast.
  3. Heat a pan with some coconut oil.
  4. Sauté the chicken breasts for 5 minutes.
  5. Put chicken into a greased baking dish.
  6. Bake for 15 minutes at 350°F.
  7. Extract the juice from the orange.
  8. Add coconut oil to the same pan where you cooked the chicken and sauté the arugula leaves, carrot and zucchini squares for 4 minutes.
  9. Stir in the cashews, almonds, orange juice and lentils.
  10. Sauté for 2 more minutes.
  11. Season with salt and pepper to taste.
  12. Serve and top with the baked chicken breast.
  13. Enjoy!

One of the healthiest and tastiest meal you’ll ever eat!

Ingredients:

  • 16 ounces of anchovies
  • ½ broccoli head
  • 1 red onion
  • 1 parsnip
  • 1 zucchini
  • 1 cup of cooked quinoa
  • 4 garlic cloves
  • 1/2 tsp. of curry powder
  • 1 tbsp. of ghee
  • Salt and pepper to taste

Process:

  1. Preheat oven at 350°F.
  2. Cut the onion into slices.
  3. Season the anchovy fillets with salt, pepper and curry powder.
  4. Put the anchovy fillets into a baking dish.
  5. Top the anchovies with onion rings.
  6. Bake anchovies for 15 minutes.
  7. Cut the zucchini and carrot into small squares.
  8. Cut the broccoli into small florets.
  9. Heat a pan with the ghee and sauté the veggies.
  10. Serve anchovy with the veggies and quinoa.

Crust Ingredients

  • 1 cup of coconut flour
  • 1 tsp. of baking powder
  • ½ tbsp. of stevia
  • 1 tbsp. of ghee
  • 1 tsp. of vanilla extract

Filling Ingredients

  • 2 eggs
  • 2 tbsps. of stevia
  • 2 oranges
  • 2 tbsps. of almond flour
  • 1 tsp. of lemon zest, grated

Process

  1. Preheat oven at 350°F.
  2. Put all the crust ingredients into a food processor and blend until smooth.
  3. Line a baking mold with parchment paper.
  4. Pour the mixture into the baking mold.
  5. Extract the orange juice.
  6. In another bowl, whisk the eggs.
  7. Stir in the remaining filling ingredients.
  8. Pour this mixture evenly over the crust.
  9. Bake for 20 minutes until filling is set.
  10. Let it cool for 15 minutes.
  11. Cut into squares.
  12. Serve and enjoy!

Ice Cream

Ingredients:

  • ½ cup almond milk
  • 1 banana
  • ½ cup of blueberries
  • ½ cup of coconut flakes
  • 3 ounces of almonds
  • 2 tbsps. of stevia
  • 2 cups of water
  • 1 tsp. of vanilla extract
  • 4 ounces of dark chocolate
  • Banana Split Ingredients:
  • 2 bananas
  • 1 cup of strawberries
  • 2 ounces of pecans
  • 3 ounces of dark chocolate

Process:

  1. Put the water into a pot and bring to a boil.
  2. Place a heat proof bowl over it and pour the almond milk in it.
  3. Add the vanilla extract and heat.
  4. Finely chop almonds and the dark chocolate.
  5. Add them to the mixture.
  6. Mash the banana.
  7. Gradually add the almond milk to the mashed banana and continue whisking.
  8. Continue whisking until it has a firm consistency.
  9. Chop the blueberries.
  10. Stir in the stevia and blueberries.
  11. Refrigerate for 15 minutes.
  12. Put the ice cream in the freezer and stir constantly every 30 minutes until it is set.
  13. Cut the 2 bananas in half lengthwise.
  14. In a double boiler, melt the chocolate.
  15. Place the sliced banana in two large bowls.
  16. Slice the strawberries.
  17. Take ice cream out of the freezer and serve 2 scoops onto the bananas of each bowl.
  18. Pour the melted chocolate over the ice cream and top with strawberries and almonds.
  19. Enjoy!
