Absolutely amazing chicken recipe for dinner!!

Preparation time: 10 minutes
Cooking time: 15 minutes
Total Time: 25 minutes
Serves: 4

Ingredients

  • 4 chicken breast
  • 2 parsnips
  • 2 scallions
  • 1 cup of Brussels sprouts
  • 1 cup of cooked quinoa
  • 4 garlic cloves
  • 2 celery springs
  • 1 parsley spring
  • 2 tbsps. of coconut oil
  • ½ tsp. of cayenne pepper
  • ½ cup of water
  • Salt to taste

Process

  1. Preheat oven to 350°F.
  2. Add the chicken fillets and water into the baking mold.
  3. Cut parsnips into juliennes.
  4. Slice the scallions and the Brussel sprouts.
  5. Mince the garlic.
  6. Chop the celery and parsley.
  7. Add the veggies and spices to the chicken and season with salt and pepper to taste.
  8. Bake for 15 minutes at medium-heat.
  9. Serve the chicken with quinoa and veggies.
  10. Enjoy!
