Ingredients:
- 1 cup coconut flour
- 1 cup of blueberries
- ½ cup of almonds
- ¼ cup of cashews
- 3 eggs
- 1 butter stick
- ¼ cup of raw honey
- ⅓ cup of ghee
- 1 tsp. of vanilla extract
- 1 tsp. baking powder
- ¼ tsp. of salt
Process:
- Preheat oven at 350°F.
- Grease a muffin tin with some ghee.
- In a large bowl, mix the coconut flour, baking powder and salt.
- Whisk the eggs.
- Melt the butter with the ghee.
- Mix the whisked eggs with the butter, ghee, cashews and almonds.
- Combine the previous mixture with the dry ingredients.
- Stir in the blueberries.
- Pour the mixture over the greased muffin tins.
- Bake for 15 minutes.
