Don’t you know zucchini is a good source of dietary fiber and is very low in calorie, so why not try this delightful taste and rich in vitamins recipe!

Preparation time: 10 min
Cooking time: 15 min
Total Time: 25 min
Serves: 4

Ingredients:

  • 2 zucchinis
  • 8 turkey ham slices
  • 3 oz. of parmesan cheese
  • 2 tomatoes
  • ½ cup of water
  • 2 tbsps. of balsamic vinegar
  • ½ cup fresh coriander
  • 1 dried marjoram spring
  • ½ tsp. of cayenne pepper
  • 1 tbsp. of ghee

Instructions:

  1. Preheat oven at 350°F.
  2. Cut the zucchini into thin slices.
  3. Cut each turkey ham into strips.
  4. Roll each ham slice on each zucchini strip and pierce each one with a toothpick.
  5. Slice the tomatoes.
  6. Chop the coriander.
  7. In a food processor, put the tomato slices, water, coriander, marjoram, balsamic vinegar and a pinch of salt and blend until smooth.
  8. Top each zucchini roll with parmesan cheese and tomato sauce.
  9. Grease a baking mold with the ghee.
  10. Put the zucchini rolls into it.
  11. Bake for 15 minutes.
  12. Serve and enjoy!
