Serves: 3
Ingredients:
- 3 cooked beets
- 4 scallions
- 1 ½ cups of cooked quinoa
- 1 cup fresh parsley
- 6 ounces of pecans
- 1 eggplant
- 1 small broccoli head
- 1 orange
- 2 tbsps. of olive oil
- ½ cup of coriander
- 2 tbsps. of coconut ghee
- Salt and pepper to taste
Process:
- Cut the beets and eggplant into small squares.
- Slice the onion scallions.
- Chop the parsley and coriander.
- Cut the broccoli into florets.
- Heat a pan with the ghee.
- Sauté the scallions, broccoli and eggplant for a few minutes or until soft.
- Mix the veggies with the beet, pecans and parsley.
- Season with salt and pepper to taste.
- Extract the juice from the orange.
- In a food processor, blend the olive oil, orange juice and coriander until smooth.
- Season with salt and pepper to taste.
- Pour this dressing over the salad.
- Serve and enjoy!
