Preparation time: 10 minutes
Cooking time: 20 minutes
Total Time: 30 minutes
Serves: 3

Ingredients:

  • 3 cooked beets
  • 4 scallions
  • 1 ½ cups of cooked quinoa
  • 1 cup fresh parsley
  • 6 ounces of pecans
  • 1 eggplant
  • 1 small broccoli head
  • 1 orange
  • 2 tbsps. of olive oil
  • ½ cup of coriander
  • 2 tbsps. of coconut ghee
  • Salt and pepper to taste

Process:

  1. Cut the beets and eggplant into small squares.
  2. Slice the onion scallions.
  3. Chop the parsley and coriander.
  4. Cut the broccoli into florets.
  5. Heat a pan with the ghee.
  6. Sauté the scallions, broccoli and eggplant for a few minutes or until soft.
  7. Mix the veggies with the beet, pecans and parsley.
  8. Season with salt and pepper to taste.
  9. Extract the juice from the orange.
  10. In a food processor, blend the olive oil, orange juice and coriander until smooth.
  11. Season with salt and pepper to taste.
  12. Pour this dressing over the salad.
  13. Serve and enjoy!
