Ingredients:
- 1 cup of mushrooms
- 1 cup of cooked lentils
- 1 red bell pepper
- 1 yellow bell pepper
- 1 ripe avocado
- ½ red onion
- 2 garlic cloves
- 2 tbsps. of ghee
- Salt and pepper to taste
Process:
- Mince the garlic cloves.
- Cut the onion into slices.
- Cut the bell peppers and avocado into strips
- Heat a pan with the ghee over medium heat.
- Sauté the garlic for 2 minutes.
- Stir in the bell peppers and onion slices.
- Sauté for 3 more minutes.
- Cut the mushrooms into slices.
- Add the mushrooms.
- Season with salt and pepper to taste.
- Serve bell pepper fajitas with avocado and lentils.
