Mushrooms & Bell Peppers Fajitas

Cooking time: 15 minutes
Total Time: 20 minutes
Serves: 2

Ingredients:

  • 1 cup of mushrooms
  • 1 cup of cooked lentils
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 ripe avocado
  • ½ red onion
  • 2 garlic cloves
  • 2 tbsps. of ghee
  • Salt and pepper to taste

Process:

  1. Mince the garlic cloves.
  2. Cut the onion into slices.
  3. Cut the bell peppers and avocado into strips
  4. Heat a pan with the ghee over medium heat.
  5. Sauté the garlic for 2 minutes.
  6. Stir in the bell peppers and onion slices.
  7. Sauté for 3 more minutes.
  8. Cut the mushrooms into slices.
  9. Add the mushrooms.
  10. Season with salt and pepper to taste.
  11. Serve bell pepper fajitas with avocado and lentils.
  12. Enjoy!
