Stuffed Tomatoes

Stuffed Tomatoes - looks like a simple recipe but it's definitely healthy! #PaleoFood #PaleoRecipe #PaleoSnack #Paleo #ProudtobePaleo

Preparation time: 5 min
Cooking time: 10 min
Total Time: 15 min
Serves: 3

Ingredients:

  • 10 cherry tomatoes
  • ½ cup of cream cheese
  • 4 slices of turkey ham
  • 1 cup of arugula leaves
  • 1 bunch of coriander leaves
  • 1 tsp. of cayenne pepper
  • 1 tsp. of coconut oil
  • Salt to taste

Instructions:

  1. Heat a pan over medium heat.
  2. Cut the ham into small squares.
  3. Add the coconut oil and cook the ham until crisp.
  4. Chop the arugula leaves.
  5. Chop the coriander.
  6. In a bowl, mix the ham, cream cheese, arugula, coriander and cayenne pepper.
  7. Slice off the top of each cherry tomato.
  8. Remove pulp and seeds.
  9. Stuffed each tomato with cream cheese mixture.
  10. Serve and Enjoy!

Substitutes
You can substitute the bacon with ham.

Chef Notes
Use only fresh cherry tomatoes and do not freeze or bake the tomatoes.

Healthy and absolutely great combination of meat, veggies & white rice!

Preparation time: 5 minutes
Cooking time: 20 minutes
Total Time: 25 minutes
Serves: 4
Ingredients:

  • 16 ounces of Italian sausages
  • 2 cups of cooked White rice
  • 4 scallions
  • 1 jalapeño pepper
  • 3 garlic cloves\
  • 1 broccoli head
  • 1 eggplant
  • ½ lettuce
  • 2 tbsps. of balsamic vinegar
  • 2 tbsps. of ghee
  • Salt and pepper to taste

Process:

  1. Chop the scallions and jalapeño pepper.
  2. Mince the garlic cloves.
  3. Cut eggplant into small squares.
  4. Cut the broccoli into florets.
  5. Shred the lettuce.
  6. Slice the Italian sausages.
  7. Heat a pan with the ghee.
  8. Sauté the scallions and garlic until the onion is translucent.
  9. Stir in the sausages and cook for 5 more minutes. Stir constantly.
  10. Add the lettuce, jalapeño pepper, eggplant, balsamic vinegar and broccoli.
  11. Cover the pan for 2 more minutes until the vegetables are soft.
  12. Season with salt and pepper to taste.
  13. Serve with white rice.
  14. Enjoy!

Ingredients:

  • 16 ounces of chicken breast
  • 1 red onion
  • 2 bunches of asparagus
  • 2 parsnips
  • 1 lemon
  • 1 celery stalk
  • 1 thyme spring
  • 2 green bell peppers
  • 2 cups of cooked white rice
  • ¼ cup of water
  • 1 tbsp. of coconut oil
  • Salt and pepper to taste

Process:

  1. Cut the chicken breast into halves lengthwise.
  2. Season the chicken with salt and pepper.
  3. Arrange the pieces in small rolls.
  4. Cut parsnips, onion and bell pepper into juliennes.
  5. Heat the coconut oil into a skillet to medium-high heat.
  6. Sauté the onion and bell pepper for 2 minutes.
  7. Season with salt.
  8. Add the parsnips and asparagus.
  9. Sauté for 3 minutes and season with pepper.
  10. Extract the juice from the lemon.
  11. Chop the celery.Add the chicken rolls, water, lemon juice, celery and thyme.
  12. Add salt and pepper if needed.
  13. Cover and cook for 10 minutes, stirring occasionally.
  14. Serve chicken with white rice.
  15. Enjoy!

Enjoy every bite of this delicious cupcake!

Preparation time: 5 minutes
Cooking time: 25 minutes
Total Time: 30 minutes
Serves: 2

Muffin Ingredients

  • ½ cup of raisins
  • 2 peaches
  • 1 egg
  • 1 tsp. of vanilla extract
  • 1 tsp. of ground cinnamon
  • 2 tbsps. of almond flour
  • ½ tsp. of baking powder
  • ¼ cup of water
  • 1 tbsps. of coconut oil

Garnish Ingredients

  • 2 dates
  • 1 small orange
  • 2 tbsp. of almond milk
  • 4 ounces of fresh strawberries

Process

  1. Preheat oven at 350°F.
  2. Grease muffin tins with the coconut oil.
  3. Heat saucepan with the water.
  4. Add the raisins and cook for 3 minutes.
  5. Put raisins and water into a blender and blend for a few seconds.
  6. Cut peaches into slices.
  7. In a food processor, put the almond flour, egg, peach slices, vanilla extract, cinnamon and baking powder and blend until well combined.
  8. Stir in the raisins and mix well.
  9. Pour the mixture into the muffin tins.
  10. Bake for 20 minutes or until a toothpick inserted to the center of each muffin comes out dry.
  11. Meanwhile, extract the juice from the orange.
  12. Put all the garnish ingredients into a saucepan and cook for 5 minutes.
  13. Mash with a fork and stir until thickened.
  14. Set aside.
  15. Garnish the muffins with the date mixture and top with some strawberries.
  16. Enjoy!

So classic and healthy burger for breakfast!

Preparation time: 10 minutes
Cooking time: 15 minutes
Total Time: 25 minutes
Serves: 4

Ingredients:

  • 1 pound of Italian sausage
  • 7 eggs
  • 2 ripe avocado
  • 1 green bell pepper
  • 1 red onion
  • 1 bunch of fresh parsley
  • 3 tbsps. of ghee
  • Sea salt and pepper to taste

Process:

  1. Grease four 3½-inch biscuit cutters with some ghee.
  2. Chop the sausages.
  3. Place two cutters on a plate and fill them with the sausage meat to form a patty.
  4. Heat a pan and add some ghee.
  5. Cook the patty for 4-5 minutes on each side.
  6. Remove the patties from the cutters.
  7. Whisk the eggs.
  8. Grease four 3 ½ biscuit cutters with some ghee and put them onto the pan you used.
  9. Add some whisked eggs and cook until the eggs are firm.
  10. Chop the onion, bell pepper and parsley.
  11. Cut the avocados into slices.
  12. Put the avocado, onion, bell pepper and parsley into a food processor and blend for a few minutes.
  13. Season with sea salt and pepper to taste.
  14. Set 4 egg patties on a plate and top them with sausage and avocado mixture. Top them with another patty.
  15. Enjoy!

  • 2 apples
  • 1 carrot
  • ½ lettuce head
  • 4 radishes
  • ½ cup of cashews
  • 2 celery sticks
  • ¼ cup olive oil
  • 1 lemon
  • Salt to taste

Process:

  1. Chop the lettuce.
  2. Cut the apple and radishes into small squares.
  3. Shredded the carrot.
  4. Chop the celery into small pieces.
  5. Extract the juice from the lemon.
  6. In a large bowl combine all the ingredients together.
  7. Season with salt.
  8. Serve and Enjoy!

Swaps
You can substitute lemon juice with lime juice.

It has what we need for our body, indeed, super healthy!

Preparation time: 5 minutes
Cooking time: 20 minutes
Total Time: 25 minutes
Serves: 3

Ingredients:

  • ½ lettuce
  • 2 chicken breasts
  • 3 Eggs
  • 4 Tomatoes
  • ½ Red onion
  • 2 avocados
  • 3 cups of water
  • 1 Tbsp. of ghee
  • ½ cup of olive oil
  • 2 garlic cloves
  • 1 spring of celery
  • 1 jalapeño pepper
  • ½ cup of parsley leaves
  • ½ cup of apple cider vinegar
  • Salt and pepper to taste

Process:

  1. Put water into a pot and bring to a boil.
  2. Add the eggs and let boil for 7 minutes.
  3. Peel and slice the eggs.
  4. Slice the tomatoes.
  5. Peel and slice the avocado.
  6. Slice and season the chicken breast with salt and pepper.
  7. Sautee chicken breast into a stainless steel pan with 1 tbsp. of coconut oil.
  8. Slice the onion.
  9. Put the olive oil, celery, apple cider vinegar, jalapeño pepper, parsley, garlics and salt into a food processor and blend for a few minutes.
  10. Arrange the salad on a plate.
  11. Put the dressing over the salad.
  12. Enjoy!

Ingredients:

  • 16 ounces of chicken thighs
  • ½ cup of mushrooms
  • 1 cup of cooked lentils
  • 1 red onion
  • ½ broccoli head
  • 2 garlic cloves
  • 1 lemon
  • 1 rosemary spring
  • 1 celery stalk
  • 3 ounces of cashews
  • 1 tbsp. of ghee
  • 1 tsp. of cayenne pepper
  • 2 cups of water
  • Salt to taste

Process:

  1. Preheat a skillet with the ghee at medium high heat.
  2. Slice the onion.
  3. Mince the garlic cloves.
  4. Cut the mushrooms into small pieces.
  5. Add onion, garlics and mushrooms to the preheated skillet.
  6. Chop the celery.
  7. Add the rosemary, celery, cashews, salt and pepper.
  8. Sauté for 5 minutes.
  9. Extract the juice from the lemon.
  10. Put the chicken thighs into a large bowl and add the lemon juice and salt to taste and toss to coat well.
  11. Put the chicken thighs with the lemon juice into the skillet.
  12. Cook over medium-high heat for 10 minutes.
  13. Stir occasionally.
  14. Cut the broccoli into florets.
  15. Meanwhile, bring the 2 cups of water with a pinch of salt to a boil.
  16. Add the broccoli and let boil for 2 more minutes.
  17. Add mushrooms mixture over the chicken thighs.
  18. Serve chicken with broccoli and lentils.
  19. Enjoy!

  • 1 cup of almond milk
  • ¼ cup of almond flour
  • ¼ cup of almonds
  • 1/3 cup of unsweetened shredded coconut
  • ¼ cup of raw honey
  • 1 tbsp. of vanilla extract
  • 1 tsp. of ground cinnamon
  • 2 eggs
  • 2 tbsp. cup of ghee
  • ¼ tsp. of lemon zest

Process:

  1. Preheat oven at 350°F.
  2. In a large bowl, whisk all the ingredients until well combined.
  3. Line a baking mold with parchment paper.
  4. Pour the mixture into the baking mold.
  5. Bake for 30 minutes or until golden brown.
  6. Let cool and cut it into small cubes.
  7. Serve and enjoy!
