These burrito recipe is flavorful, healthy and easy to make!

Preparation time: 5 minutes
Cooking time: 20 minutes
Total Time: 25 minutes
Serves: 4

Ingredients:

  • 8 tortilla wraps (must be certified gluten-free)
  • 1 yellow bell pepper
  • 2 onions
  • 2 sweet potatoes
  • ½ pineapple
  • 8 ounces of strawberries
  • 2 avocado
  • 2 cups of sliced mushrooms
  • ½ cup of chopped basil
  • ½ cup of chopped parsley
  • ½ cup of chopped thyme
  • ¼ cup of chopped coriander
  • Juice from 2 lemons
  • 2 tbsp. coconut oil
  • 5 garlic cloves
  • Sea salt and pepper to taste

Process:

  1. Chop the garlic and onion.
  2. Peel the sweet potato and cut it into small squares.
  3. Put the sweet potato squares into a pot with 1 cup of water and bring to a boil for 5 minutes or until soft.
  4. Remove from water.
  5. Peel the avocado and cut into slices.
  6. Heat a pan with the oil and sauté the garlic, onion and mushrooms.
  7. Put the mushrooms mixture into a bowl.
  8. Put on each tortilla wrap, some avocado slices, mushroom mixture, sweet potato squares, basil, parsley, thyme, coriander and lemon juice.
  9. Season with sea salt and pepper to taste.
  10. Wrap each tortilla wrap.
  11. Cut the pineapple and strawberries into small squares.
  12. Serve with the fruits.
  13. Enjoy!
