These burrito recipe is flavorful, healthy and easy to make!

Serves: 4
Ingredients:
- 8 tortilla wraps (must be certified gluten-free)
- 1 yellow bell pepper
- 2 onions
- 2 sweet potatoes
- ½ pineapple
- 8 ounces of strawberries
- 2 avocado
- 2 cups of sliced mushrooms
- ½ cup of chopped basil
- ½ cup of chopped parsley
- ½ cup of chopped thyme
- ¼ cup of chopped coriander
- Juice from 2 lemons
- 2 tbsp. coconut oil
- 5 garlic cloves
- Sea salt and pepper to taste
Process:
- Chop the garlic and onion.
- Peel the sweet potato and cut it into small squares.
- Put the sweet potato squares into a pot with 1 cup of water and bring to a boil for 5 minutes or until soft.
- Remove from water.
- Peel the avocado and cut into slices.
- Heat a pan with the oil and sauté the garlic, onion and mushrooms.
- Put the mushrooms mixture into a bowl.
- Put on each tortilla wrap, some avocado slices, mushroom mixture, sweet potato squares, basil, parsley, thyme, coriander and lemon juice.
- Season with sea salt and pepper to taste.
- Wrap each tortilla wrap.
- Cut the pineapple and strawberries into small squares.
- Serve with the fruits.
