Just so perfect for a healthy dinner!!
Preparation time: 10 minutes
Cooking time: 20 minutes
Total Time: 30 minutes
Serves: 4
Ingredients:
- 16 ounces of anchovies
- 8 stalks of asparagus
- 1 broccoli head
- 2 cups of cooked white rice
- 1 red onion
- 2 green bell peppers
- 4 lemons
- 1 bunch of parsley leaves
- 1 coriander spring
- 3 ounces of almonds
- 2 tbsps. of coconut oil
- Salt and pepper to taste
Process:
- Extract the juice from the lemons.
- Chop the parsley and coriander.
- Mix them with the lemon juice, salt and pepper.
- Cut the onion into slices.
- Cut anchovies into small squares.
- Add the anchovies squares to the lemon mixture.
- Let repose for 10 minutes.
- Preheat oven to 350°F.
- Grease a baking mold.
- Cut bell peppers into juliennes.
- Cut broccoli into florets.
- Put anchovies squares with their juice into the baking mold.
- Put on top the bell peppers, broccoli, almonds and asparagus.
- Bake for 20 minutes.
- Serve with white rice.
- Enjoy!
