Parsley Salmon and Broccoli

Just so perfect for a healthy dinner!!

Preparation time: 10 minutes
Cooking time: 20 minutes
Total Time: 30 minutes
Serves: 4

Ingredients:

  • 16 ounces of anchovies
  • 8 stalks of asparagus
  • 1 broccoli head
  • 2 cups of cooked white rice
  • 1 red onion
  • 2 green bell peppers
  • 4 lemons
  • 1 bunch of parsley leaves
  • 1 coriander spring
  • 3 ounces of almonds
  • 2 tbsps. of coconut oil
  • Salt and pepper to taste

Process:

  1. Extract the juice from the lemons.
  2. Chop the parsley and coriander.
  3. Mix them with the lemon juice, salt and pepper.
  4. Cut the onion into slices.
  5. Cut anchovies into small squares.
  6. Add the anchovies squares to the lemon mixture.
  7. Let repose for 10 minutes.
  8. Preheat oven to 350°F.
  9. Grease a baking mold.
  10. Cut bell peppers into juliennes.
  11. Cut broccoli into florets.
  12. Put anchovies squares with their juice into the baking mold.
  13. Put on top the bell peppers, broccoli, almonds and asparagus.
  14. Bake for 20 minutes.
  15. Serve with white rice.
  16. Enjoy!
