Easy to cook cookies and has a taste of real fruit!
Preparation time: 15 minutes
Cooking time: 20 minutes
Total Time: 35 minutes
Serves: 4
Ingredients:
- 4 pears
- 2 eggs
- 3 cups of coconut flour
- 2 tbsps. of almond milk
- 2 tbsps. of almonds
- 2 tbsps. of macadamia nuts
- 2 tbsps. of raw honey
- 1 tsp. of vanilla extract
- ½ tsp. of ground nutmeg
- 2 tbsps. of ghee
- ½ tsp. of lemon zest
Process:
- Preheat oven at 350°F.
- Grease a cookie mold with the ghee.
- Cut pears into slices.
- Put the pears, coconut flour, almond milk, honey, vanilla extract, almonds and lemon zest into a food processor and blend until smooth.
- Whisk the eggs.
- Add to the whisked eggs the previous mixture.
- Add in macadamia nuts.
- Pour 2 tbsps. of the mixture into the mold until you finish the cookie mixture.
- Bake for 20 minutes.
- Let cool for a few minutes.
- Sprinkle with nutmeg on top..
- Serve and Enjoy!
