Enjoy our favorite easy and healthy recipe!

Preparation time: 5 minutes
Cooking time: 15 minutes
Total Time: 20 minutes
Serves: 4

Ingredients:

  • 8 Eggs
  • 1/4 cup of water
  • 1 Avocado
  • 2 yellow bell peppers
  • 2 chipotle peppers
  • 2 Tbsps. chopped coriander
  • 2 Tbsps. chopped celery
  • 2 tsps. coconut oil
  • Sea salt to taste

Process:

  1. Chop the peppers.
  2. Slice the avocado.
  3. Whisk the eggs with the water into a large bowl.
  4. Heat a stainless steel pan with the coconut oil.
  5. Pour some of the egg mixture into the pan and let cook for a few minutes.
  6. Add the peppers, coriander and celery to the eggs.
  7. When almost ready, add some avocado slices and fold the omelet in half.
  8. Serve and enjoy!
