Stuffed Tomatoes

Preparation time: 5 min
Cooking time: 10 min
Total Time: 15 min
Serves: 3

Ingredients:

  • 10 cherry tomatoes
  • ½ cup of cream cheese
  • 4 slices of turkey ham
  • 1 cup of arugula leaves
  • 1 bunch of coriander leaves
  • 1 tsp. of cayenne pepper
  • 1 tsp. of coconut oil
  • Salt to taste

Instructions:

  1. Heat a pan over medium heat.
  2. Cut the ham into small squares.
  3. Add the coconut oil and cook the ham until crisp.
  4. Chop the arugula leaves.
  5. Chop the coriander.
  6. In a bowl, mix the ham, cream cheese, arugula, coriander and cayenne pepper.
  7. Slice off the top of each cherry tomato.
  8. Remove pulp and seeds.
  9. Stuffed each tomato with cream cheese mixture.
  10. Serve and Enjoy!

Substitutes
You can substitute the bacon with ham.

Chef Notes
Use only fresh cherry tomatoes and do not freeze or bake the tomatoes.
