A simple snack recipe yet amazingly healthy!

Preparation time: 10 minutes
Cooking time: 20 minutes
Total Time: 30 minutes
Serves: 2

Ingredients:

  • 1 cup of almond flour
  • ½ cup of coconut flour
  • 2 eggs
  • 2 limes
  • 3 ounces of cashews
  • 1 tsp. of baking powder
  • 1 tsp. of stevia
  • 1 tsp. of ground nutmeg
  • ½ tsp of lemon zest, grated
  • 2 tbsps. of ghee

Process:

  1. Preheat oven at 350°F.
  2. Grease a baking mold with some ghee.
  3. Put the coconut flour, almond flour, baking powder, cashews and stevia into a food processor and blend for a few seconds.
  4. In another bowl, whisk the eggs.
  5. Add the nutmeg, lemon zest and the remaining ghee.
  6. Combine the flour mixture with the egg mixture.
  7. Pour into the greased baking mold.
  8. Bake for 20 minutes.
  9. Serve and Enjoy!
