Crust Ingredients
- 1 cup of coconut flour
- 1 tsp. of baking powder
- ½ tbsp. of stevia
- 1 tbsp. of ghee
- 1 tsp. of vanilla extract
Filling Ingredients
- 2 eggs
- 2 tbsps. of stevia
- 2 oranges
- 2 tbsps. of almond flour
- 1 tsp. of lemon zest, grated
Process
- Preheat oven at 350°F.
- Put all the crust ingredients into a food processor and blend until smooth.
- Line a baking mold with parchment paper.
- Pour the mixture into the baking mold.
- Extract the orange juice.
- In another bowl, whisk the eggs.
- Stir in the remaining filling ingredients.
- Pour this mixture evenly over the crust.
- Bake for 20 minutes until filling is set.
- Let it cool for 15 minutes.
- Cut into squares.
- Serve and enjoy!
